Mark Ellis: Head Chef
Mark has trained in some of the finest five star Hotels and Michelin starred Restaurants in the country, working alongside some of the biggest names in the industry, learning all styles of cuisine, Marks greatest influence is his former Head Chef Simon Radley of the Chester Grosvenor where he learnt precision cooking and adding that tongue in cheek humour to his dishes, Mark's love of Cheshire produce allows him to use the very best the county has to offer due to his excellent relationship with local suppliers which reflect in his menus.

Daniel Naylor: HR Manager
Daniel is responsible for the Castle's employees and the delivery of excellence in customer care. Daniel's employment history is that of Peckforton Castle, after studying at Sheffield Hallam University he went on to travel the world before joining Peckforton's team. Since then Daniel has had a 6 month project running The Lion and Swan Hotel in Congleton before returning in May 2009. Dan's future goals are to ensure Peckforton Castle delivers the best customer journey in Cheshire and grow our service standards to that of a 5 star hotel.

Pam Lummis: Reception Manager
Pam joined the reception team in November 2008 having come from a background of Estate Agency Work. Pam enjoys working with the general public and loves the busy environment that comes with working in the Hotel Industry. The fast pace of reception work suits Pam as she loves the challenge of a busy check out followed usually by a wedding with a full check-in!!. Pam likes nothing more to see guests returning to the Castle because they were so impressed by their first visit.

Mark Birdsall: Head Falconer
Mark has worked as a professional falconer for the last 15 years. Mark recently managed another busy falconry centre in Cheshire before he joined us here at the castle in July 2009. Mark has extensive knowledge and expertise in the training of many different bird of prey species as well as qualifications in Veterinary nursing, Zoo Animal Management and Retail management. Mark is looking to use this at the castle to create one of the most enjoyable, informative and dynamic display teams in the country.

Karl Lummis: Maintenance Manager
Karl has recently joined the Castle as maintenance manager having come from a background of Industrial Landscaping. He sees his new role as an exciting challenge as the variety of work with-in the Castle is vast. As you can imagine the Castle has plenty of jobs to keep him busy, the variety of jobs is immense and it even includes feeding the peacocks!
