Michael Auld: Hotel Manager
Michael started his hospitality and catering career by training as a chef. He quickly found his way into hotels and front of house, with the Hotel du Vin chain, where his passion for guest interaction, attention to detail and customer service shone through. He quickly progressed through the company, spending time also as a General Manager with the Thistle Hotel group. In 2011 Michael won the coveted Caterer & Hotelkeeper Acorn Award, an achievement he names as his greatest. Michael brings his award winning experience and skills to the Castle along with big ideas for the direction he wishes to take the business.

Mark Ellis: Head Chef
Mark Ellis, Head Chef Mark has trained in some of the finest five star hotels and
Michelin starred restaurants in the country, working for and alongside the
biggest names in the industry, learning all styles of cuisine ranging from classical
French to the modern molecular gastronomy. Mark’s greatest influence is
his former Executive Chef Simon Radley of the five red starred Chester Grosvenor Hotel and Spa where he learned precision cooking and adding tongue
in cheek humor to his dishes. From there he embarked on an extensive cooks
tour of the country to broaden his experience before finally settling back in
Cheshire. Marks love of Cheshire produce and his excellent relationship with its
local suppliers is reflected in his menu’s, utilising the very best the area has to
offer, resulting in carefully crafted dishes that are created with flair, imagination,
precise timing and seasoning.

Daniel Naylor: HR Manager
Daniel is responsible for the Castle's employees and the delivery of excellence in customer care. After studying at University he went on to travel the world before joining our team. Following a six-month project running The Lion and Swan Hotel in Congleton he returned in May 2009. Dan's future goals are to ensure Peckforton Castle delivers the best customer journey in Cheshire and grow our service standards to that of a 5 star hotel.

Pam Lummis: Reception Manager
Pam joined the reception team in November 2008 having come from a background of Estate Agency Work. Pam enjoys working with the general public and loves the busy environment that comes with working in the hotel industry. The fast pace of reception work suits her, as she loves the challenge of a busy checkout followed usually by a wedding with a full check-in! Pam likes nothing more to see guests returning to the Castle because they were so impressed by their first visit.

Karl Lummis: Maintenance Manager
Karl has recently joined the Castle as maintenance manager, having come from a background of Industrial Landscaping. He sees his new role as an exciting challenge as the variety of work within the Castle is vast, including feeding the peacocks!
