Live Music & New Menu – 1st Year Anniversary of the 1851 Restaurant

Join us for an evening of celebrations, as the 1851 restaurant has its first anniversary on 15th July 2026.

Providing an exquisite fine dining experience at Peckforton Castle since 2025, the Executive Head Chef Brian Hughson, with experience from the Dorchester, the Savoy and more, has created an outstanding new culinary experience for the celebration.

What to expect on the night:
Arrive 30 minutes prior to your table reservation to enjoy a drinks reception with welcoming live music and a chat with Brian Hughson.

Be seated at your reserved table for a culinary delight – a 9-course tasting menu, where every plate builds on the previous to deliver a crescendo, while also enjoying a complimentary wine flight worth £55.00 per person – the first of the evening is a vintage champagne. The full wine flight menu will be announced soon!

Live local to the Castle, within 5 miles? We’re offering a complimentary pick-up and drop-off service in our Land Rover Defender vehicles – contact us upon placing your booking to check for availability and to book.

Executive Head Chef, reflects on the 1851 Restaurant’s First Anniversary and the Latest Menu,

“Having led the team since the launch of 1851 last year, it has been incredibly rewarding to see the restaurant establish itself as a destination for fine dining within Peckforton Castle. We are immensely proud of everything we’ve achieved during our first year, particularly being recognised with a Taste Cheshire Award – a significant milestone that reflected the hard work, passion and dedication of the entire team.

One of the greatest rewards has been welcoming guests back time and time again to experience our menus. Seeing familiar faces return is a real testament to the quality of the food, service and overall experience we strive to deliver every day. It reflects the commitment, camaraderie and passion of everyone involved, and there is no greater compliment than knowing our guests want to come back for more.

My approach to creating a dish always begins with balance – balancing flavour, texture, presentation and the overall dining experience. Every course is carefully considered, not only as an individual dish but as part of a wider journey, with each element building in complexity and excitement before reaching its crescendo. Thoughtfully paired wines add another layer to the experience, enhancing and complementing the flavours throughout.

I often begin with a visual concept of the dish I want to create and then work to bring that vision to life on the plate. I’m constantly striving to develop dishes that surprise and delight our guests, always refining, adapting and improving along the way. Every menu is shaped by the strengths and creativity of the kitchen team, and I’m fortunate to work alongside talented chefs who share the same commitment to excellence.

The development process evolves naturally. Sometimes a central ingredient or component inspires the dish, and from there the sauces, garnishes and supporting flavours are carefully built around it. Seasonality is always at the forefront of my thinking, and we are passionate about sourcing the highest-quality ingredients available. Wherever possible, we use local produce alongside herbs grown here within the grounds of Peckforton Castle.

I believe every ingredient deserves the same level of creativity. Exploring new flavour combinations, textures and techniques is what keeps cooking exciting, and we’re always looking for ways to elevate each ingredient to its fullest potential.

Beyond the individual dishes, I think carefully about how the entire menu flows. A tasting menu should tell a story, creating memorable moments from the first course to the last. Most importantly, every guest should feel welcomed, valued and cared for throughout their visit, enjoying a truly special experience from start to finish.

Throughout my career, every kitchen has shaped me as a chef. My time at The Dorchester and The Savoy was particularly influential, teaching me the importance of refinement, attention to detail and building strong, motivated teams. Those lessons continue to guide me today. Inspiration can come from anywhere – a seasonal ingredient, a conversation, a cookbook or even a moment outside the kitchen.

Looking ahead, my ambition is to continue developing both our menus and our people. I want every member of the kitchen team to have the confidence and knowledge to engage directly with guests, adding a more personal dimension to the dining experience. We are always striving to evolve, improve and raise standards, and I am incredibly proud to be leading the continued evolution of fine dining at Peckforton Castle.”
