The 1851 Restaurant offers a unique dining experience, featuring modern European cuisine. The menus are brimming with fine dining options, some classic with a modern twist and others as full of imagination as they are flavour. The 1851 Restaurant treats diners to a gastronomic extravaganza. Featuring carefully selected, locally grown and reared produce, all hand-picked by Executive Head Chef Brian Hughson to best reflect the season and the region.

Located in the former scullery of the Castle this lovingly restored section of the Grade I listed building retains many of its original features including the windows and two cast iron cooking ranges, which date back to the 1840s. These are combined with the modern day comforts of luxury furnishings, striking a perfect balance between the old and new. The courtyard adjoining the Brasserie complements by offering additional space and a modern al fresco dining experience.

With over 30 years of global culinary experience, Chef Brian steps into the role of Executive Head Chef at Peckforton Castle, bringing with him a distinguished career defined by innovation, leadership, and a passion for locally sourced produce.

Chef Brian’s culinary journey has taken him around the world, honing his craft in some of the most renowned and demanding kitchens. He has led Michelin-starred kitchens, opened award-winning restaurants, and overseen the culinary operations of luxury five-star hotels, earning a reputation for creative excellence and unwavering quality.

Dedicated to creating a truly unforgettable dining experience, Brian is excited to be back on home turf, having lived in Cheshire for most of his life.

Dining at Peckforton Castle is a truly special occasion. We welcome both hotel residents and non residents to experience our decadent offering in this unique setting. Choose from our award-winning 1851 restaurant or the more relaxed setting of the 2010 brasserie and feast on an array of dining options made from fresh, vibrant, locally sourced produce. To complement your meal in either dining area, you will find a vast array of wines and other beverages available.

 

*Our bars & restaurants now charge a discretionary 10% service charge, 100% of which is distributed to our team. If you wish for this to be removed you can ask your server on the day.

Our sights are firmly set on earning coveted AA Rosettes — and, in the longer term, the prestigious Green Michelin Star.

At our 1851 Restaurant, we proudly champion local partnerships. We’ve teamed up with trusted Cheshire wine supplier, C & O Wines, and are passionate about showcasing exceptional English wines, alongside award-winning local gins like Three Wrens Gin — a fellow Taste Cheshire favourite.

Our Head Chef, Brian Hughson, is equally committed to nurturing the next generation of culinary talent. He’s fostering a supportive and positive kitchen culture where work-life balance is a priority and asking for help is always encouraged. “There is great talent coming through,” he says. “They have the right attitude — and that’s half the battle.”
