Brasserie Commis Chef - salary dependent on experience

Job Description
  • Complete preparation of produce as instructed
  • Adhere to the cleaning schedule for the kitchen
  • Maintaining stock rotation when taking in deliveries and using produce
  • Knowledge of the full menu, and be able to give a description of all dishes
  • To work as part of the wider restaurant team
  • To comply with legal requirements under the H&S act 1974 and food hygiene
  • Adherence to all policies, procedures, standards, specifications, guidelines and training programmes
  • To escalate maintenance issues to the relevant parties
  • Be organized and motivated

Restaurant Manager - Full Time, Salary £18 - £22k PA                         

Reporting to the Food and Beverage Manager your main duties & responsibilities will be:

  • To assist the Food and Beverage Manager in the smooth operation of all areas of the Restaurant department ensuring that the 1851 Restaurant maintains its 3 Rosettes and strives for excellence at all times.
  • To ensure all products and services are charged correctly and procedures are followed to track, capture and analyse revenue streams.
  • To develop, train and monitor all personnel within the department.
  • To assist the food and beverage Manager in seeking ways to enhance the profits of the business through cost control and by constantly using up sales opportunities to improve gross margins.
  • Liaise with Reception regarding each arrival, departure, and special requirements for guests.
  • To monitor departmental training, keep records and consistently review effectiveness in delivery.
  • Liaise with the Head Housekeeper regarding linen requirements for the department.
  • To communicate & liaise with all departments on a daily basis as and when required.
  • To complete the daily paperwork at the beginning and end of the shift, including float counts, balancing tills, cashing up.
  • To carry out Hotel Duty Management shifts as and when required.
  • To assist in other F&B led departments such as Brasserie and conference & banqueting.


The ideal candidate should have:

  • Strong background working at Restaurant Manager level in a 2/3 Rosette Restaurant

Food and Beverage Manager - Full time, Salary £22-£25K PA

We are looking for a Food & Beverage Manager to report directly into the Operations Manager.

As the Food & Beverage Manager you will oversee the day to day running of the Food & Beverage outlets within the hotel.This includes one 3 rosette restaurant, modern brasserie, 3 bars and room service.You will be expected to control all budgets allocated to these departments and be part of the budget and forecasting process in liaison with the Hotel Manager.

You should have the ability to effectively plan, organise, direct and work under pressure to meet strict deadlines, be able to create and drive sales whilst having a methodical eye for detail.

Overseeing a team of more than 50 you must be able to demonstrate a track record of motivating and leading others as well as dealing with staff communication, training, discipline and grievance issues.Rota scheduling in line with payroll, performance reviews, promotions and recruitment and selection.

This person will be responsible for the implementation of service standards and must therefore have the ability to put together SOP’s, train staff on the job and performance manage teams to ensure consistency in service and standards along with the passion and enthusiasm for customer service and the ability to identify customers expectations and then deliver or exceed these.


·Must have the ability to drive sales through service and generate positive guest feedback.

·Knowledge of point of sale system systems

·Basic H&S, food hygiene and personal licence holder – not essential but preferable.

·The role will include a mixture of shifts of early, late and weekends and will include Duty Management shifts across the hotel.

This position is very hands on and would ideally suit someone with a Food & Beverage operational background within the hotel industry who is looking to progress.
